About Us
The Daily Catch is a family-owned restaurant group and seafood processor based out of Boston, MA established in 1973. Our wholesale department, Calamari Fisheries, operates a HACCP facility on Boston’s Fish Pier where we source seafood directly from fisherman on the docks. This facility is the central commissary kitchen for all The Daily Catch restaurants and a state-of-the-art squid processing facility cleaning and distributing the highest quality domestic calamari.
Job Summary
Calamari Fisheries is seeking an experienced Kitchen Manager to lead our commissary kitchen and squid production facility. As the Production Kitchen Manager, you are responsible for managing a crew of prep cooks, fish cutters, and squid cleaners. The ideal candidate has a strong background in culinary arts specializing in seafood and can meet our quality and safety standards. As kitchen manager you will oversee the production of our sauces, pastas, and fish as well as manage storage, logistics, and deliveries to our restaurants.

Responsibilities
- Manage a crew of 8 – 12 squid cleaners and 2 – 4 prep cooks ensuring their production is efficient and up to quality standards
- Prepare and cook our line of hand-crafted packaged seafood specialty products
- Prepare and cook our sauces, pastas, and food service products for distribution to The Daily Catch restaurants
- Pick up and receive fresh fish orders from vendors around the Boston Fish Pier
- Deliver fresh fish and other goods to The Daily Catch restaurants on a daily/weekly basis
- Cut, portion, clean, and pack fish and shellfish for distribution to The Daily Catch restaurants
- Ensure all wholesale orders are packed, fulfilled, and ready for pick-up/drop off
- Oversee opening and closing tasks to ensure the facility is well maintained and set up for success; maintains all HCAAP guidelines
- Place orders for seafood, packaging, and dry goods as needed
- Manage plant inventory to ensure proper cost controlling and stocking
- Safely use and operate all kitchen tools and equipment, including knives, grill, fry, stoves, and oven
- Maintain equipment and production areas to ensure a clean and safe working environment; troubleshoots and repairs broken machinery
- Uses forklift and other machinery
- Work environment includes refrigerated areas and frequent handling of raw seafood
- Fulfill any other tasks to ensure the plant is operating effectively
Qualifications and Experience
- Required: Minimum 2 years’ experience as a Kitchen Manager
- Required: Strong experience and knowledge of Seafood including purchasing, cutting, and storing seafood
- Strong knowledge of food preparation, cooking techniques, and knife-handling skills
- Ability to work in a fast-paced environment and handle multiple tasks at once
- Ability to stand for long periods of time and lift up to 50+ pounds and operate a forklift
- Previous experience cooking in an Italian and/or seafood restaurant is a bonus
- Previous catering cooking experience is a bonus
- Valid driver’s license required; company vehicle provided for deliveries
